Long Weekend!

I love that its another long weekend already!  The summer is just flying by!  It’s the annual Rib fest weekend so I am definitely going to check it out at some point.  I missed it last year, so I am excited to see what it’s like.

To kick off the long weekend I had a veggie burger and corn-on-the-cob for dinner!  How can you go wrong?




The corn wasn’t as good as I was hoping for, but still good nonetheless.

I snacked on a LUNA bar after dinner, I had the S’mores one – it was good!

Giant Salad Bowl

I got a bit behind on posting yesterday, so it was a wonderful surprise to see that Beth posted from England!  Did I mention I am jealous of her trip!  Ugh 😛

Last night I made a quick and simple dinner, but it was soo yummy.  I tried the Organic Creamy Butternut Squash Soup by Imagine– it was very good!


I also made a turkey sandwich on these great buns that I found!



This morning I woke up early to get working away at my thesis.  Guess what I woke up to?  More rain!  I guess I can’t complain because I have been spending most of my days inside, but a little sunshine would be nice!  Apparently, August is suppose to pick up!

I made some coffee and oatmeal to warm me up.


In the mix:

  • 1/3 cup oat/seed mix, rice milk, water
  • 1 banana
  • 1 tbsp peanut butter
  • 1 tbsp unsweetened coconut
  • sprinkle of peanuts
  • sprinkle of dried blueberries


After a busy morning, I had worked up quite the appetite for lunch!  I have been cravings salads so much lately, which is unusual because I am a huge carb-lover!  I decided to pick-up some good salad bowls at Dollarama because my bowls are too tiny and I hate making salads on a plate.  I found these giant bowls, so I bought two!  They are perfect.  I made a huge salad in the giant bowl along with some wildberry tea.



Huge right?  I love it! 😀

In the salad:

  • 3 leaves of romaine lettuce
  • 6-7 slices of cucumber
  • 1/2 a tomato
  • 1 stalk of celery
  • 1 small carrot
  • 3 sweet pickle slices
  • 2 tbsp cheddar cheese, cubed
  • 1 cob of corn
  • 3-4 slices of turkey, chopped
  • 3 tbsp PC’s Mediterranean dressing

Such a delicious meal!

I found LUNA bars at the grocery store this week so I will be trying one of those later as some pre-game food for frisbee!  Hope they are good!

Pub Lunch

Hi again! Things are still going great with me over here in England. We had a delish pub lunch a couple days ago that I’d like to share – doesn’t get much more British than that! Sorry for the time delay, but things are busy busy around here. I’ll be back to my daily blogging soon enough :O).

Straying from tradition I actually did not have a pint to drink – not much of a beer fan :OP. Instead I had a peach bellini! Such a girl…

Okay, so not the most traditional, but I enjoyed it and that’s what counts. For my main I had chicken and chips. The chicken was in a yummy mushroom sauce and it came with some nice veggies on the side. Just what I need to eat more of right now!! I was also really impressed with the array of sauces they delivered to our table so I had to snap a pic. Have you ever seen such selection!?

Aaaand of course no pub lunch could be complete without some STICKY TOFFEE PUDDING!! My fave.

I certainly didn’t eat all of these but I had quite a bit!! After all the special wedding food and then a few nights in London I’m feeling a bit full and sluggish, so today I’ve resolved to get back to normal (as much as I can). I just enjoy things more when they’re in moderation and treated as treats instead of essentials. I woke up and had a good run this morning so I’m feeling nice and refreshed already.

We’re off to visit my mum’s mum in Monmouth, Wales this afternoon, so if possible I’ll be checking in from there soon!

First AM Workout

As you may or may not know, I am not a morning exerciser!  I prefer to workout around 4PM or 5PM.  I find I have the most energy at this time and its a great time to sneak it in before dinner.  I have been trying to convert to morning workouts to have a better schedule and to prepare for the 10K and half marathon I plan on running within the next year.  So, this morning was my first attempt at an AM workout!  Although I did not run nearly as long as I wanted to, I was glad that I got my butt out of bed!  I think it will take a few days to get used to it 😛

After my run, I made oatmeal!  I used an oatmeal mix that has all kinds of seeds in it, its delish!  And of course, topped with some blueberries and peanut butter.  I broke out the KERF dish this morning!



Another busy day lined up today so I better get working on my To Do List!!

FINALLY some sun outside today!  What a pleasant surprise to wake-up to the sunshine coming in my window!  I felt guilty for having slept in so long while the sun was out.  Since I woke up at 9AM, I had a brunch around 11PM.  Made a random plate of yummies.


I had Activia plain yogurt with trail mix sprinkled on top, flax seed flatbread with red pepper hummus, and some grapes!  It was yummy!  I apologise for the mess, I am surrounded by papers everywhere I go these days.  Somehow it has even seeped into my kitchen!  Can’t wait to have the writing process finished.

I’ve got a few errands to run this afternoon, stop at the lab, and then head out to coach at the rink.  Afterwards, the coaches are having a farewell party for myself and another coach before we leave in the Fall.  I will probably be posting about it late tonight!

Raining Cats & Dogs

The weather has been rain, rain, rain, RAIN!  When is the sunshine going to show its smiling face?  Soon I hope!

I forgot to post last night’s dinner!  I realised this morning when I woke up… oops!  It was a good one too – picked up some mixed salads from a bakery in town… soo good!


The bakery has a huge salad bar and you can take a little bit of anything that you want!


As for tonight’s dinner, my sister made me a delicious meal!  She made a veggie burger topped with cucumber, tomato and tzaiki.  The burgers were made out of lentils, mushrooms, walnuts, garlic, onion, and coriander (I think that’s it!).  Then she made a watermelon, cucumber and feta salad on the side and it was sooo good! 


Heading to bed early tonight because I have such a bad headache – just can’t shake it!  See you tomorrow 🙂

Wedding Bells

Hello from the UK!! I arrived safe and sound yesterday morning and it’s been go go go ever since, despite the jet lag! We just finished up my cousin’s wedding and brunch and are having a bit of a rest before the pig roast tonight. (I can’t believe there’s MORE food on the way!!)

The wedding has been absolutely beautiful and the food just the same so I’m taking full advantage of this little break to share our eats. But first of course I have to show off the lovely bride!

Isn’t she the cutest!? I LOVED her dress – the flowers on the shoulder were so unique and pretty. It also matched the favors!

I haven’t tried mine yet since I have zero room left after the meal, but I’ll review soon :O). My aunt actually made all of the cupcakes herself AND did all of the flowers. I can’t even imagine how long it all took, but I have to say, all the hard work really paid off. It all looked so lovely!

After some really great speeches we all sat down to wine and brunch – here’s a look at my plate of food.

English people put cream on everything by the way – ha. This was soooo amazingly good it was actually piece 1/2 for me!! Yiiikes.

So now we’re back at my Nana’s house getting changed and relaxing for a few. Well, everyone except my brother who’s kindly agreed to stay behind and “watch” the keg. Oh geez. I am still insanely tired and this fullness is not helping but I have to rally because I think we’re in for a long night! Glad I could pop in to share all our yummy food and I’ll be leaving you in Aaron’s capapble hands once again. See you in a few!!
