I love, love chocolate. It’s rich and creamy and delicious and really, the most perfect food ever. I eat a little bit everyday and it makes me very happy :O).
Tomorrow is our work gift exchange and we’ve been asked to bring in something to share. So tonight I decided to make some chocolate truffles. I used Ina Garten’s recipe for these. I’ve yet to try a bad recipe by her, so in instances where I’d prefer not to risk it, she’s a great go-to. The only variation I made is to use Van Gogh Double Espresso Vodka instead of Grand Mariner. I didn’t have any Grand Mariner but when I thought of the idea of subbing the Espresso vodka it sounded even a little bit better to me. So vodka it was!
I started by getting the chocolate mixture ready.
I would like to go swimming in that :O).
Ina said to let it sit for an hour at room temperature. However, when I came back to roll my truffles it was like chocolate frosting. Not good. So I put my bowl in the fridge for half an hour. That made them better, but still really soft. One hour later we were in business. So in conclusion – let the mixture sit for an hour in the fridge. That was a time consuming lesson.
Once ready, I rolled my truffles in cocoa and cane sugar and they were just beautiful!! Of course I had to taste them too. Oh my…I can’t possibly describe how good these are. HOLY YUM. I would eat the whole tray right now if I could!!
So there you have it! A lovely, Christmasy evening of chocolate making, holiday music and a lit up tree. Loooove this season :O).

Yummy! I love me some chocolate! Those look incredible. I’m sort of allergic to refined sugar so some day I’m going to learn how to make chocolate truffles with another kind of sweetener.
