Last night’s class was faaabulous. I cannot wait to share.
The lesson was mushrooms and greens and although that may not sound like the most exciting edition, I ADORE mushrooms – easily one of my fave foods – so I was super excited!
During the demonstration, we learned to make:
- Ragout
- Wilted greens and mushrooms
- Grilled caesar salad
- Mushroom and goat cheese struedel with beurre blanc and reduced vinaigrette
- Roasted Portobellos
- Coleslaw

After tasting that gorgeous struedel my group and I KNEW we had to recreate it! We also made the grilled caesar salad.
Honestly, this was the best caesar salad I have ever tasted. The dressing is an egg yolk (raw!), anchovies, olive oil, salt, pepper, Worcester, garlic and mustard. Then we sliced 2 heads of romaine in half, drizzled with EVOO, sprinkled with sea salt and flash grilled them on a super high heat. The grill really brought out the flavor in the romaine and the dressing was so much lighter but very much more flavorful than that heavy creamy awfulness you usually find when dining out.
But the real star of the night is this beauty, which is perhaps my favorite foodie pic on this blog…ever.

So! Now it’s the work day, tonight is Roomie Birthday Din, tomorrow is brunch with this girl at Blue Duck Tavern, dinner with my work friendies at Bistro de Cacao and of course lots of irresponsible birthday behavior all weekend long.
Next time I see you I will be a QUARTER CENTURY OLD. But what an amazing quarter century it’s been :).
