I’m working late today, which allowed me plenty of time to whip up and extra special breakfast this morning. Something I’ve been meaning to try for a while is the HTP Autumn Grilled Banana Sandwich. It just looks too good!
I made one of my very own this AM, with a few variations to the original recipe.
Mine included the following:
- 1 egg
- Splash of vanilla soy milk
- Cinnamon
- Drop of vanilla
- Two pieces of Trader Joe’s 3 seed bread (the best bread 🙂 )
- Banana
- 1/4 cup canned pumpkin
- Tablespoon chia seeds
- Drizzle of maple syrup
- Sprinkle of crushed pecans
First, beat the egg, soy milk, cinnamon and vanilla. Dredge the bread and place it on a greased skillet.
While the bread is cooking, slice banana into 4 pieces and place it on a separate greased skillet, cooking it for a few minutes on each side.
And while those two are going, stir together pumpkin, more cinnamon, maple syrup and chia seeds. Warm mixture in the microwave for 20 seconds.
Assemble sandwich by placing banana in between the toast, then topping with pumpkin mixture and crushed pecans.
Allow your pretty sandwich to pose for multiple photographs.
Devour :D.
