I feel like a million bucks after 9 1/2 hours of much-needed sleep :D.
I stayed in last night and got all my weekendly chores done, in preparation for a busy holiday weekend. I scrubbed our kitchen, vacuumed and dusted my room, cleaned the bathroom sink area and washed my sheets. Having all of that accomplished on Friday night was a great feeling! Now I can just enjoy all the fun that’s ahead :).
After making our kitchen look so beautiful I just couldn’t bring myself to cook in it! Instead I assembled a nice salad.
Spinach, mozzarella, beets, celery, capers and smoked salmon. You really can’t beat the ease of assembling a pretty salad. And aside from a bit of beet juice, my clean kitchen stayed intact!
Well, that is until this morning, when I felt like doing something new and creative :).
Breakfast quesadilla!
To make, I sprayed a tortilla with a bit of canola oil and lay it on a pan. Next, I spread some peanut butter on top, then a mashed banana and sprinkled on some cinnamon. I lay another tortilla on top of that and sprayed the top with a bit of canola oil. I placed a heavy skillet on top of the quesadilla while it cooked so that everything melted together. While it was cooking I mixed a few spoonfuls of Greek yogurt with 1/2 tbsp. of maple syrup. The quesadilla was flipped once half way through, then cut and plated with the maple yogurt and some cinnamon on top. DELISH! Crispy outside with a warm, gooey peanut butter banana center. Cooking experiment success :).
So! I’m off to my Body Combat class in a few minutes. This afternoon I’ll be apartment hunting with my future roomie and tonight Fourth of July celebrations will ensue.

I’m also loving the breakfast quesadilla. I’m not a big fan of mashed bananas (a textur-al experience that I’m not too fond of), but it’s something I’d like to try, especially with greek yogurt.
The salad looks great too. Spinach and mixed greens are something I’ve been falling in love with for breakfast, especially topped with a poached or fried eggs.

Glad you got a good rest, Beth! I slept more than 12 hours last night and now I feel crappy, lol. Guess there IS a thing such as too much rest!
